Our Administration:

Lori Maxwell - Administrative Director
Miss Lori started working at CEC in 2008. She has served as a 
substitute, Spanish Enrichment teacher, Administrative Assistant
 and Assistant Director. Lori graduated from Florida State University 
with a degree in Elementary Education and taught Kindergarten - 
3rd Grade in Palm Beach County. She also holds a Florida Director's 
Credential. Lori is a member of and grew up attending St. Peter's 
United Methodist Church since the age of 4. She resides in 
Wellington with her husband Walt and their two children Regan and Giles.    

Traci Picknell -  Assistant Director
Traci began working as a teacher at St. Peter's CEC in 1999 after her youngest child graduated from the Yellow Room. Traci graduated from the University of Toledo with a degree in Elementary Education. She taught in the public school system in Ohio before moving to Florida. She is married to her high school sweetheart, Chris, and has three children, Tarah, Anthony and Kelsey, and one grandchild, Camden. She has been a member of St. Peter's United Methodist Church since 1997. Traci enjoys spending time with her family, reading and being out in the sunshine!

Mandi Hill - Administrative Assistant 
Miss Mandi has worked at CEC since 2008. She graduated from the University of Central Florida with a bachelors degree in Early Childhood Education. Mandi was our initial VPK teacher in the summer of 2009 and 2010 and has also worked as the Spanish Enrichment teacher and Administrative Assistant. She is married to her husband Steve and they have 3 daughters, Avery, Kylah and Teagan, who are all CEC Alumni! 


Our Team of Teachers; 

Jennifer Boursiquot is the 3 year old teacher in the yellow room .She joined CEC in July 2017. Jennifer graduated from Palm Beach State College with an Associate in Science Degree in Interior Design Technology. Born and raised in West Palm Beach, she enjoys beach combing for sea glass, exploring parks and camping with her husband, Steve, and their two daughters, Madelyn and Abigail. With a passion for arts, crafting and educational adventures, she also leads a Girl Scout Troop.

Debbie DeLong came to work at St. Peter's in 1986 working in various positions and enjoys teaching in the Green Room as the VPK Pre-K teacher! She is married to her husband, Bill, and just celebrated 39 years of marriage. She is the proud mom of two married daughters, Jennifer and Tara. Debbie's outside interests include gardening and oil painting. 

Debbie Luongo - Joined the CEC staff in 2007.  She graduated with a degree in Early Childhood Education, holds a Florida Director credential, a certificate in childcare center management,, and a national childcare credential.  Miss Debbie is a VPK  teacher in the Purple room.  Both of her sons are CEC alumni.  In her free time she enjoys the beach, reading, and attending her sons sporting events.

Jennifer Metz - Ms. Jen has been part of the CEC family for over 7 years, and is the red room Monday to Friday teacher. Prior to joining St. Peter's Jennifer worked in the corporate banking world where she held several licences and professional designations. Jennifer attended Palm Beach state college (Business Administration) and is actively pursuing a degree in Early Education. Jennifer is married with two children and enjoys painting, gardening and spending time at the pool where her children compete for the Wellington Wahoo swim team.

Samantha Mitchell was born in Ft. Lauderdale and grew up and spent most of her llfe in Ohio. She has been married for almost 2 years and has one daughter, Sophia, who is 3. Sophia will be attending St. Peter's in the red room with Ms. Jen this year.  This is her first year teaching at St. Peter's and she is continuing to receive her degree in Early Childhood Education.

Lenna Moncelli - Miss Lenna graduated with a degree in Education with a focus on Biology and Chemistry Sciences, as well as ESOL. She enjoys watching the magic of children when they learn something new! She is married to the love of her life, Frank and they have two beautiful girls together. They spend their days at the beach, exercising and playing in the park. She feels so blessed to be doing what she loves and is excited to see what each year will bring!

Anne Riepma has worked at CEC since 1989. She is a certified Montessori teacher who taught at local Montessori schools before joining the staff at CEC. Originally from Michigan, she and her husband have two daughters and two grandsons. Anne enjoys exploring "old Florida" places, reading, and spending time with her family and dog.

Sara Valdivieso teaches the is the 2 1/2 year old children in the orange room. She grew up as an air force brat and moved with her family all over the U.S. They finally settled in Osceolo County, FL. She received both her Elementary Education Degree and her Masters in Non Profit Management from FAU. She met her husband Roland at an FAU Alumni event and they married in 2004.  Her teaching certificate is current and she is accredited in early childhood education.  She taught in several different grades from high school to Kindergarten until she chose to stay home for 8 years with her 2 children Roland Andres (10) and Elena (6). When her daughter was attending CEC she took the music teacher position and then moved to the orange room the next year.
